As I mentioned before there is an art gallery in Ardrigole on the Beara Peninsula. Major towns tend to have such things more than the remote areas you are planning on. Take a look at some of the following links, which may be of interest:

Another thought has come to mind. There are a lot of craft studios and artists in the village of Ballydehob in West Cork. Add it to your list.

I'm not nearly as experienced as some of the others who post here (have only been to Ireland twice and one trip was really short), but I've found local artisans almost everywhere we went. Sometimes they had little shops, sometimes they were at street fairs or farmers markets, but they're definitely there! Wherever you go, I don't think you'll have any trouble finding local artwork (paintings, pastels, etc.), photography, crafts, etc.

I've only been to Ireland once, so this is based on very limited experience.

In Roundstone, we saw several artists. Apparently there are days where artists gather and take boats to a little island in the bay to paint.

In Carrick-on-Shannon, we went to a center for area artists that was just amazing. I was really impressed with some of the wood carving and sculpture. In Manorhamilton, also in Ireland, we met a group of potters in a pub. There is apparenlty a potters' collective in the town.

In Dublin, we happened upon a great gallery called WhichCraft. They are online at http://www.whichcraft.ie/. Wonderful painting, wood, scultpture, jewelry, textitle art...We also had a great talk with a worker there about how impressed we were with the art throughout our trip and in particular in Carrick-on-Shannon. She said that Leitrim was becoming a popular place for artists to form collectives or set up their own shops.
