We will be in Dublin on Easter Sunday.  Will pubs be open? How about pubs in Galway on Good Friday?

Welcome to my forum. Pubs will be closed on GF but open on ES. I believe that a year or two ago some pubs in Limerick got permission to open because of sports that were on locally on GF. But that was extremely unusual.
