Pin a Michelin 712 map on an empty wall. Decide any must see places and pin them. work out some stepping stones(towns) on a rough route.
Book the 1st and last nights.
Make a list of 3 guest houses and 1 hotel for these potential places. email the hotels and ask if there are (1) any events or festivals locally on your possible dates. (2) if the hotel is doing any special offers on your possible dates.
Talk to your host and ask in the local pub what's worth seeing.
Phone ahead at breakfast for the evening accommodation.
Only book one night at once, if the place is good or there's things to do and see within a 30mile radius book an extra night.
Tourist Information Bureau are great and will always find you a bed for the night. Provided there is one available and of course provided they are open! not much fun knocking on doors at 6pm.

Two rules for Ireland, Take your time & bring a sense of humour
I'll be leaving for Ireland in 2 weeks. Everyone says don't worry about the B & B's - just find places when you get there - is that good advice? I would like to take our time and stop along the way in towns that interest us, but it seems too risky. We'll mostly be south and west of Shannon airport. I would book a place for our first night to be sure, but leave the other nights open? Suggestions? Advise?
Is it good advice? It depends. My clients are finding that the B&Bs have booked up early this year. But they are looking for very good places to stay. If you are not particular about where you stay you will always find something. However, searching for a B&B will take time every day. Do you want to make time to do that or do you prefer to spend your time sightseeing and enjoying Ireland? If you encounter a festival in a certain town it may be booked up. In that case you may have to go to a different town to find accommodations. Also, sometimes booking in advance at places where you will stay for 2 or three days will give you a discount.
It all boils down to your travel style. What are you comfortable with?
I like Tony's advice. I've found it convenient to book ahead either night before or morning of arrival, and never had a problem. If you're satisfied with the average B&B, this should work fine. Personally, I've never had a bad experience, but if you're very choosy your bed firmness, etc. you could have a less than optimal night. The most well-known and special places will probably be booked, so if that's your priority, you need to plan ahead accordingly.
As you see, either winging it or making reservations will work. It just depends on your comfort level with either one and the way you prefer to travel. Note: when staying at B&Bs your hosts will have recommendations for comparable B&Bs in other areas. Ask them about where you are headed next and they may well call ahead and make you a reservation.
