Any recommendations for a 2 night stay in Spanish Point County Clare?

There are not a lot of places to stay at Spanish Point. You might try Red Cliff Lodge, however they don't do breakfast there. http://www.redclifflodge.ie/

Berry Lodge gets good reviews but I've not inspected it. 

A little south of there is Doonbeg Lodge.

Belbridge House is a nice family Hotel on the point http://www.bellbridgehotelclare.com/index.html  slightly upmarket is the Armada http://www.armadahotel.com/  for B&B's then you could do worse than Southwinds http://www.bedandbreakfastireland.net/clare_southwind.htm  a little out but a great little B&B we have used a couple of times over the years.

I looked at booking Spanish Point / Miltown Malbay in July and for August and found it hard to get availability! The Willie Clancy Festival in July it's hard to find anything there. The Armada is very close an ideal spot, but a little pricey compared to staying a bit out. I haven't stay at the Armada but on tripadvisor it has got some mixed reviews.
