From my perspective, Cashel is do-able enroute to Youghall, allowing you to 'pick up' a leg of the Vee into Lismore and Waterford, if you so wish. Alternately, it is a reasonable 'detour' from Adare, as well, but I vote for the earlier visit, AS A DETOUR.
Lots of folk 'swing by' Powerscourt and/or Glenndalough, enroute from Dublin to Kilkenney, but, with only one night there, it wouldn't leave a lot of time for Kilkenney, itself.
I would say either two nights in Kenmare or Killarney (MY recommendation, that early in the year) and use one day to do the six hour Gap of Dunloe Tour from there, rather than driving back and forth to Dingle (at about 1 1/2 hours EACH way).
Hold the May 1st night in 'reserve' (UNBOOKED), in case you want to add a day to any of your other stops. If not, stay in Cashel that night, if you haven't seen it already. You can make a reservation at the Tourist Office in either Killarney, Dingle or Adare, once you decide.
Enroute from Adare to Cashel (a bit south of Limmerick) is Lough Gur, a significant, but lesser visited archeological site with a HUGE stone circle. If you have 'excess' time while in the Bunratty area, consider Cragganoween (Know that my spelling is ALWAYS suspect).
Driving from Kinsale to Killarney, you COULD 'drop in' to see Drombeg Stone Circle, but you probably wouldn't want to linger long -- the N71 is a narrow, winding road with beautiful vista around nearly every turn and too much looking around could make for a late arrival in Killarney.
As an alternative to the N71, you could take the Cork- Macroom-Killarney route of the N22 and detour to Gougane Barra, but without a determined detour, you won't get back onto the INSPIRING road from Glenngarriff to Kenamre through the Caha Pass AND the road from Killarney from Kenmare through Moll's Gap. You could 'pick up' the Moll's Gap drive, but I wouldn't think it would be worth the time to drive all the way down to Glenngarriff and back just to drive the road..

Bob has given you some good suggestions. I think you need to go back to the drawing board and pay closer attention to the beginning and endof your trip. To me it would make sense to overnight in Co. Wicklow (perhaps Glendalough) rather than backtrack to Dublin.
There is much to see and do in and around Kilkenny so you might consider a two-night stay there. You could do Cashel from there as a day trip.
I like Bob's suggestion of the Vee Drive Between Cahir and Lismore. It is a scenic drive that not many people do.
In Kinsale I would recommend Woodlands House, Kilcaw House, Pier House (right in town), and Landfall House.
Definitely think of either Kenmare or Killarney between Kinsale and Dingle. Do not do the Gap of Dunloe from Dingle. It is near Killarney.
April 30 & May 1 are where you should steal extra days from and addthose 2 daysto other parts of your trip. No need to stay in Adare or nearby, since Bunratty is so close.

Thanks for the input. I'm not certain I can change some of my reservations, but I will try. We won't be picking up our rental caar until Monday the 23rd, so a daytrip on Sunday would be by public transportation.
We shall keep both of your suggestions in mind as we rework our plans.
