I will be driving from Blarney Castle to Limerick (via the N20) and was wondering if there is anything I should be sure to stop for along the way. I've been to Mallow before and have seen the castle and know it's a nice town. Any other nice towns, castles, churches, etc I should see?
I don't know of anything DIRECTLY on the N20, but if you are willing and have the time, there are some interesting detours available. Most notable, is Lough Gur and Grange: www.shannonheritage.com/LoughGur.htm
Or, 'butter' yet, consider a trip along the Butter Road to Millstreet. You can stop along the way and see the Kerryman's Table and Knocknakilla, stop for lunch in Millstreet at Nibbles or The Wallis Arms, and THEN visit Kanturk.

A climb up the hill to the church & roundtower ruins in Ardpatrick... the views are quite commanding...you can also see Castle Oliver from up there... there are some very nice hiking trails just a mile or so out of town.
The Donkey Sanctuary in Liscarroll is quite interesting and is close to Kanturk Castle (worth a stop).
Anne's Grove Gardens between Mallow and Fermoy.
Kilmallock has some nice ruins and a non-touristy town centre.
Bob and Corey have filled you in on what to see. I was just in Kilmallock yesterday and enjoyed visiting the ruins of two churches and the castle gate in town. There is a small museum beside the larger church ruin that is free. Pop in for some info. There is a nice restaurant in Bruff called the Old Bakehouse.
