My wife and I are planning a two-week trip to Ireland in early May. We will be accompanied by my sister and adult son. We were considering renting a 3 bedroom condo in a central area to use as a base and then do one day tourist trips, returning each night to the condo. I was thinking of a lodging location perhaps in Tipperary or Limerick. We will be flying in and out of Shannon.

Since you have two weeks you may want to consider each week in a different location. If you give me an indication of what you want to see in Ireland I can tell you what places would be good bases.

Any suggestions for better alternatives? The lowest cost accommodation in Ireland is hostels, followed by B&Bs, then guesthouses. Self-catering is a good cost-effective alternative especially when several people are traveling together and can split the cost. In your case self-catering is an excellent option.
