Castle stays

We are doing a 14 day self drive all around Ireland in June.  We would like to stay in a Castle for a couple of nights.  We would prefer a more rustic experience then one that looks like a nice hotel.  Any suggestions would be appreciated.

How about Waterford Castle? It is on a private island in a river just south of Waterford.
