Thanks for the banoffee update. Glad it turned out well for you. What temperature was the oven on for three hours? Were the cans totally submerged in water?
The oven temperature was set on 350 degrees F. and the cans were completely submerged in the water. We also added about a half teaspoon of instant coffee when making the whip cream topping, and this added a delicious touch to the outcome. Rosa, what a great idea for a dessert to try on a cranky cold weekend! It would definitely qualify for "comfort food"

Just a quick note to let you know how Joyce is doing after her accident in Ireland last August, that yielded a broken shoulder and upper arm. It is closing in on 6 months (Feb 10) and she is on the mend. She finished up her 6 weeks of physical therapy in Nov, and is now doing self-therapy at home morning and night. She has regained most of her mobility, and her reach is approaching 85%. She hasn't regained all her strength, and some days it hurts....depending on the weather. Suppose she will have that from now on. Our travel insurance did reimburse for the 1st class plane ticket for her, and for the out of pocket Dr. visit and perscriptions grand total $130.00. We just got the check. They wouldn't reimburse us for the cell phone after asking that we arrange for a method to get a hold of us. Also the over-size blouses we had to buy to accomodate her arm in a sling were not reimbursed. Over-all we were very pleased with the medical care she received in Ireland. We were sure glad for the peace-of-mind with the travel insurance that only cost about $100 for both of us. We wouldn't go again without it. We long to go back, but it is not looking good for 2010. The air fares are sure a lot higher for early spring, on thru August than they were when I was researching prices a year ago now. It looks to me like they are running average about $300/ticket more at this time. So for those lucky enough to go this year, please keep us posted, and be sure to do a trip report when you return! Thanks for the update on Joyce. I'm happy to hear she is progressing nicely after that nasty accident. I think you are right that she may always feel something from now on when the weather is changable. My husband broke his ankle long ago and still feels an ache on occasion. She can think of it as a weather forecast.
Yes, airfares are up. The airlines consolidated flights and there is less capacity (flights and seats) flying everywhere. That means the flights are pretty full so they don't need to lower the prices. Save up those pennies and frequent flyer miles and maybe a trip will be in the not too distant future.

I am glad you were able to book at Sleepy Hollow. Elizabeth was a great hostess. She has a lot of tourist information in her sun room, that will help you with your stay in Ennis. We had planned for 2 nights, but were only able to spend only one night there, due to Joyce's last Dr. appointment in Castlebar. We will try to return to Ennis and the Sleepyhollow B&B the next time we fly out of Shannon. It is very convenient, on the south side of the city, for an early morning get-away to SNN airport. If you need to leave early, before the hot breakfast is served, Elizabeth may be willing to set out a cold continental breakfast for you. Dan
